Sweet Potato, Chicken and Quinoa Stew

My husband and I got each other an Instant Pot for Christmas this year. We have been trying out new recipes for it since then using both the pressure cooker and slow cooker functions. It is great to make one-pot meals and help minimize cleanup. I recently made this hearty stew recipe which I found in an email we got from Village Fitness, the gym we are members of. So this recipe is not one I personally wrote, but share it with that attribution.


  • 1 and 1/2 pounds boneless skinless chicken breasts, cut into cubes
  • 1 cup quinoa 
  • 2 pound large sweet potatoes, peeled and chopped ~3-1/2 cups
  • 1 can (15.25 ounces) black beans, drained and rinsed
  • 1 can (14.25 ounces) petite diced tomatoes (not drained)
  • 1 onion, chopped
  • 1 teaspoon minced garlic
  • 2 tablespoons of chili powder
  • 2 tablespoons cumin
  • 1 teaspoon cayenne
  • 1 teaspoon oregano
  • 5 cups low sodium chicken broth
  • ½ teaspoon salt
  • ½ teaspoon pepper

Put all of these ingredients into a crockpot.  Cook on low for 6 to 8 hours.
