Skillet Steak and Tomatoes

This steak recipe is a great healthy entrée for a quick gourmet meal.  Add sides such as baked sweet potatoes and steamed asparagus or broccoli for a complete meal packed full of essential nutrients and colors.  One serving (4 ounces) of beef will give you one-half of your daily requirements for protein, B-12, and zinc.  The vegetables give you close to your daily requirements for Vitamins A, C, K, folate as well as fiber and many micronutrients.

Tomatoes are on the Dirty Dozen list for pesticide residue, so try and use organic grape tomatoes if at all possible.  Grass fed beef is also much more preferable to conventional beef due to its greater amount of omega-3 fats.

Skillet Steak and Tomatoes

Serves 4

1 tablespoon extra virgin olive oil
1 lb. beef strip  or sirloin steak (preferably grass fed)
1 teaspoon sea salt, divided
1 teaspoon black pepper, divided
1 pint grape tomatoes (preferably organic)
1 teaspoon dried oregano

Heat the oil in a large skillet over medium-high heat.  Rub steak w ½ tsp. salt and ½ tsp. pepper then cook 5-6 minutes per side until desired doneness is achieved.  Transfer steak to cutting board and let rest for 5 minutes before slicing.  Meanwhile add tomatoes to the skillet; sprinkle with oregano and remaining salt & pepper; cook and toss for 5 minutes or until tomatoes are slightly softened.  Slice steak and serve topped with tomatoes.
