Gluten and Dairy Free Fig Muffins

     Have you ever tried fig butter?  I found it in Trader Joe’s and it is quite yummy.  It tastes like the inside of a Fig Newton cookie.  Try this recipe for a great gluten and dairy-free muffin when you see fig butter in the store.
Fig Muffins
6 eggs
¼ cup Fig Butter
¼ cup coconut oil, melted
1/8 cup maple syrup
¼ cup water
1 tsp. vanilla extract
½ cup coconut flour
¼ tsp. baking powder
½ tsp. sea salt
Preheat oven to 350 degrees. Beat eggs, fig butter, vanilla, water, maple syrup and oil with electric mixer until well blended. Sift in coconut flour, baking powder, sea salt and beat until blended. Line muffin tin with parchment paper liners and fill muffin cups evenly. Bake for 30 minutes, or until the muffins are set and edges are turning brown.
Makes 12.
