2 cups blanched almond flour
3 tablespoons coconut flour
1 teaspoon baking soda
2 teaspoons cinnamon
¼ teaspoon sea salt
2 large eggs, room temperature
2 tablespoons coconut oil, melted
1 teaspoon pure vanilla extract
¼ cup maple syrup
1 very ripe banana, mashed
1/3 cup chopped pecans
1/3 cup dairy-free chocolate chips (optional)
Preheat the oven to 350 degrees. Line 12 muffin cups with parchment baking cups. Place the almond flour, coconut flour, baking soda, cinnamon, and sea salt in a bowl and mix to combine. Crack the eggs in another bowl and mix with electric mixer. Add maple syrup, coconut oil and vanilla and mix again. Pour the wet ingredients into the dry ingredients and mix with electric mixer. Fold in the mashed banana and mix thoroughly. Add in the chopped pecans and chocolate chips, if using and blend by hand. Spoon the batter by approximately ¼ cupfuls into 12 muffin tins. The batter will be thick. Bake for 25 minutes or until done. Makes 12 paleo muffins.
