Purple Cauliflower is Fun!

     Have you seen purple, orange or green cauliflower in your local stores and wondered what they were?   I purchased a purple one this week which was on sale  at my local Kroger.  The taste is the same as the white kind, but it is even more nutritious because it contains the antioxidant anthocyanin.  This is what gives it the purple color and is also in red cabbage.  All cauliflower is very nutritious and high in vitamin C, so this was just a little extra plus.  I try to limit a lot of starchy or sugary carbohydrates and the recipe below is one that I use fairly frequently as a rice substitute,  Try it out and comment below with your thoughts.  
Cauliflower Cilantro “Rice”
 
1 head cauliflower, shredded
2 Tbl. extra virgin olive oil
2 cloves garlic, chopped
¼ cup chopped cilantro
 
Shred the cauliflower in a food processor so it resembles rice. Chop the garlic and cilantro. Heat the olive oil in a skillet and saute the garlic. Add the cauliflower and cilantro and cook until done, about 5-8 minutes.
