Carrot Cake Balls

   In the  fall there are lots of articles, recipes and pictures of sugary treats. It can be hard not to indulge. Try this recipe for a healthy snack that tastes like carrot cake.  This recipe is easy as long as you have a food processor.  For best taste, use whole Medjool dates.  
 
 

Carrot Cake Energy Balls

2 small or 3 large carrots

1 cup pitted dates

1 ¼ cup pecans or walnuts

1 tsp. vanilla

2 tsp. cinnamon

¼ tsp. sea salt

1 Tbl. virgin coconut oil, melted

½ tsp. nutmeg (optional)

¼ tsp. ginger (optional)

½ cup unsweetened coconut flakes

Peel the carrots and slice in a food processor. With the food processor chopping blade, process the dates and carrots until they are in fine pieces. Add the nuts and process again until it becomes a relatively smooth paste. Add the remaining ingredients e and process until well blended. Form balls with 1 inch melon baller (or by hand). Refrigerate 30 minutes to firm. Store in covered container in refrigerator.

Makes about 24 balls.
